How To Make Homemade English Muffins

I never even thought about baking my own English muffins from scratch but my mother-in-law gave me some of her really old cookbooks and I found this recipe.
I'm going to try it soon but wanted to share it with readers.

Every other recipe I've made from this extensive cookbook has turned out fantastic. The cookbook is from the 60's and you can definitely see the differences in eating habits with lots of animal fat and lard in the cooking and plenty of frugal cooking but nonetheless this looks like a great recipe to try out:


Homemade English Muffins

(Reference: Cooking For Young Homemakers: An Edition of the Encyclopedic Cookbook New Revised Edition 1962 by Book Production Industries, Chicago, Illinois)

3 tablespoons butter
1 1/4 teaspoons salt
2 tbsp sugar
1 cup milk, scalded
1 cake yeast
1/4 cup lukewarm water
1 egg, beaten
4 cups sifted flour

1.Add butter, salt and sugar to milk and cool to lukewarm.
2.Soften yeast in water.
3.Add yeast, egg and 2 cups of flour to cooled milk.
4.Stir to blend well then knead in remaining flour until firm and elastic.
5.Let rise until doubled in bulk. (about 1 hr)
6.Roll out 1/4 inch thick on floured surface.
7.Cut into 4-inch circles
8 leave on board. Cover and let rise until doubled in bulk. about 1 hr
9. Sprinkle with cornmeal if desired and then bake slowly on hot ungreased heavy griddle or frying pan about 7 minutes on each side.( Brown Slowly)
Makes 12 English muffins
